Double Chocolate Buckwheat Waffles
October 01 2019Homemade waffles are a classic childhood favorite for breakfast (especially when used as an ice cream sandwich). Unfortunately, most waffles aren't the healthiest thing you could eat for breakfast. These Double Dark Chocolate Buckwheat waffles are the perfect alternative. There's so much to love about buckwheat - it's gluten free, high in essential nutrients, and can lower blood sugar after eating. Sign us up! INGREDIENTS:
1/2 cup oats
1/2 cup buckwheat flour
2 Tbsp cacao powder
1 tsp baking powder
1 tsp apple cider vinegar
1 tsp flaxseed
1/2 ripe banana
3/4 cup almond milk
1-2 Tbsp maple syrup or sweetener of choice
1/3 cup chopped Alter Eco dark chocolate
INSTRUCTIONS:
Blend all of the ingredients together in a food processor - then, allow the batter to sit while you preheat your waffle maker. Fold in your chopped chocolate into the batter before cooking. Put a bit of coconut oil on your waffle maker so that the waffles are easier to take out! Cook according to the waffle maker’s instructions.
